Japanese biscuits are twice-cooked or "nido yaku." These yummy treats undergo a two-way process — baked, then left to dry and harden inside the oven. Historically, these were portable food sources for soldiers since they can easily be placed in pockets. Japan's biscuits are still the go-to snacks for many. They are definitely tasty and handy!
